Oat Cakes Recipe

I’ve been doing these oat cakes for a couple of years now and I’m forever playing around with the recipe. I often take a few into work with me for when I have my breaks and they are quite filling.. So to make 12 of these little cakes, then all you will need is.. 
150ml vegetable oil | 200g caster sugar | 1 large egg | 1tsp cinnamon | 1tsp vanilla | 140g plain flour | 1/4 tsp bicarb of soda | 300g oats | 100g raisins | *optional* a bar of dark chocolate
First off you’ll want to preheat your oven to 200 degrees (gas mark 6) and put your raisins in a small bowl of boiling water from the kettle until you need them later. Soaking them before baking will stop any that are exposed getting burnt!
In a medium sized bowl, mix your oil and sugar into a paste.

Beat the egg, raisin water, cinnamon and vanilla in a separate jug, then add to the oil and sugar paste

Finally, add the flour, bicarb of soda, oats and raisins. This is also where you can add any other things to the mix, this time I’m adding dark chocolate.

Put balls of the mixture onto a lined baking tray and bake for around 15 minutes until they’re golden brown but still soft.

Leave them to cool on the tray for 10 minutes otherwise, they will fall apart, then usually I transfer them onto a plate to cool completely before putting them away in an airtight box.

A perfect addition to a Netflix binge and a cup of coffee!
